East Meets West Winter Wonderland

A Christmas party for the books!   It’s not often our holiday event is a seasonal gathering at an actual Christmas Tree farm!  

Sonia’s family has owned it for years – she, her family and the IWFS exec decorated it to the nines; there were even bunches of freshly cut Christmas greens available for purchase for those who weren’t be able to go tree hunting!

The menu was created for us by Cascata Bistro’s Chef Paul Gauthier, who trained under Executive Chef Jason Bangerter at Langdon Hall;

Amuse-Bouche

Gougères filled with goat cheese and caramelized onion
Champagne Andre Chemin Premier cru Brut Millésimé 2016

First:

Trout Rillette with crème fraiche and sourdough crostini
2020 Villota Rioja Blanco Seleccion

Main:

Braised lamb shank with glazed leeks, spiced cabbage puree and red wine jus

Seared mushrooms with polenta, kale and truffle
